Grease traps are designed to do just what the name implies which is to trap FOG (Fats, Oils & Grease), sludge and to separate the oils from water. FOG pass through a catching system which gives them time to cool off, solidify and float to the top while solids fall to the bottom allowing the water to pass through the drain as normal.
This system must be maintained regularly in order to work effectively in keeping your grease trap clean. When done correctly, cleaning your own grease trap can save your foodservice operation significant amounts of money each year.
Western Mass. Rendering Co. can provide your foodservice establishment with the appropriate trap grease storage container and remove & recycle your brown grease on a regular schedule. We also provide a collection receipt at the time of each service and will furnish required compliance documentation when requested by your local board of health.
